Mac and Cheese (How Azriha does it...)

Ingredients: 2 tablespoons butter, 1 cup cottage cheese, 2 cups milk, 1 teaspoon dry mustard,
½ teaspoon salt freshly ground black pepper to taste, 1 pound sharp cheddar cheese (grated),
and ½ pound elbow macaroni.

I always believe in fresh grating whenever possible and i did have the time to do it, so i grated that whole lb by hand...my arms were burning, but well worth the outcome. Put 1/4 cup of the grated sharp ched on the side.

In a blender, puree the cottage cheese, mustard, salt, and pepper until smooth. then add the milk and puree till well blended.

This would be a good time to preheat the oven to 375 degrees, as the next few steps will not take long.

Use the 1 tablespoon of butter to 'grease' a 9-inch round or square baking dish. "Grease" it up nice u don't want the bottom burning. Put in UNCOOKED 1/2 lb of Macaroni. (yesh you read that right, uncooked)

Now put in the grated sharp cheddar, pour the milk mixture and stir well.

Stir it so everything spreads evenly.

This is what it should look like after being evenly stirred. Then cover with foil TIGHTLY (TIGHTLY is important as this tight foil seal will help cook the macaroni), and bake for 30 minutes.

Get your butter and cheese ready. Remove foil, stir gently, sprinkle with reserved cheese, and dot with remaining butter. Bake uncovered for 30 minutes more, until browned.

It will start to look like lava near the end of the cooking process.
Let cool for 15 minutes before serving
(serves: 4-6)

Summation: this was really good. I was actually surprised at how well the recipe turned out with the whole not cooking the macaroni part. The uncooked mac actually ends up absorbing all the liquid from the milk, cheese, and other ingredients and become quite flavorful. Its really important to tightly seal the foil, or it will come out dry, and as this is definitely a cheesier recipe, if you want it to be creamier, just add more milk. I highly recommend this ridiculously simple recipe.

yeah i made this before but it was dry. yours is liquidy before putting in the oven, so it must turn out soft & gooey still.
